Week 2

So how was your week, guys? Kick some ass? Take down some names of healthy food choices?

I've been sticking to my diet, which is probably not the healthiest as far as calorie count goes, honestly. But I can't do a whole lot of moving and I am determined. I indulged myself with 1 glass of wine and fried cheese Friday. I felt pretty bad about it, but the next day, I'd reached a total weight-loss of 5lbs. Yay! I also had a sandwich Sunday AND soup, so that kinda fucked things up. (the very very negative aspect of a too-low-calorie diet.) 

A major problem I have is lack of choices. I don't think most people would voluntarily eat what I do for dinner: 1 can of tuna, 1 egg (only 1/4 of the yolk), mustard, ginger, cumin, pepper, splash of red wine vinegar, 5 Wheat Thins). But I don't have a problem with it. I find the easiest way to make healthy food choices is HAVING healthy food choices. No duh. I get lazy and want something quick, and junk food is usually quick. Early last week I made a brown rice casserole type dish that lasted me almost all week, took about 1 minute in the microwave to heat up, and I found it delicious.
  • brown rice
  • low-sodium chicken broth
  • frozen spinach (and other veggies)
  • tuna
  • cream of celery soup
  • spices
Cook rice in the broth, un-freeze vegetables, mix it all together then cook at 350* for about 45 minutes. What is great about that dish is the potential variety. You can add whichever meat, vegetables, soup, spices you want! I'll definitely be making again.

This coming week I am determined to exercise EVERY day and hope to lose at least 2 lbs.
